I usually gravitate toward easy meal recipes, ones that are quick, minimal ingredients but are still really yummy.... this is one of those and if you are lucky enough to have leftovers - Oh wow....... it's even better!

I love making cupckaes, the pretttier the better so you can imagine my joy when I discovered these new Russian Piping Tips.
So here's the scoop, Earthfresh asked me to create a recipe using their fingerling potatoes and the very first thing that came to mind - chips, a warm, fresh out of the oven dippin' chip.
My inspiration was a local restaurant, they serve these as a side dish with their burgers but without the dip, there are never enough of them and to order them as an appetizer they are 6.99, CRAZY! These are super duper easy to make, slice, bake, eat. Start with the dip, the longer it sits, the better it is, Just mix all the dip ingredients in a medium bowl and let them get to know one another in the fridge while you start on the potatoes. Preheat your oven at 400f. I love the natural sweetness of beets especially roasted, done simple with some olive oil salt & pepper.
Sweet & delicious and reminiscent of the mini dounuts made right before your eyes at fairs & festivals.
Who doesn't love a loaded baked potato, what about a bite sized, pop in your mouth loaded potato.... perfect right?
When asked if I would like to create a recipe using EarthFresh Organic Potatoes my answer was - Heck ya!
It's no secret that I'm a fan of cheese especially a mild, creamy, buttery melt in your mouth cheese, like Havarti.
Cheedar, schmeddar..... Havarti is the only way to go when making any grilled cheese sandwich. |
