The memories of my childhood rush back every time I take a bite. My mom used to make these for us girls when we were small and every time I take a bite I can smell the chlorine in our above ground pool, I can hear kids in the neighbourhood giggling, skipping and whizzing by on their bikes. I imagine I'm sitting on a towel on the grass hair driping from a swim, my sisters and a couple friends all enjoying the warmth of the summer sunshine - life was great! There is nothing fancy about this, it's not the cucumber sandwiche Queen Elizabeth eats with her afternoon tea, it's plain Jane delicious.
You start with white bread, yup, it's gotta be super fresh white, no grains, seeds or added fiber here. Spread a desired amount of mayonaisse on the bread, add thin slices of cucumberm sprinkle with salt and papper, put the slices together and lightly squish down on the sandwich with the palm of your hand. The secret to this amazing sandwich, the white bread and the SQUISH! Ok.... back to my lunch and my memories...... 'Last one in the pool is a dirt rotten egg!!'
