Who doesn't love a loaded baked potato, what about a bite sized, pop in your mouth loaded potato.... perfect right? I was asked to use EarthFresh organic baby red potatoes and this is the 2nd recipe I've made using these little gems and I tell ya... they are yummy! Check out my other recipe HERE. I don't even think you need a recipe for these babies, yup, they are that easy. Toss your potatoes in a little olive oil until lightly coated and sprinkle on your favourite seasoning, I love Montreal Steak Spice, I then place them on a parchment lined baking sheet and pop them in a preheated 400 oven for about 30-40 minutes or until tender. Now you have to resist the urge to just pop these in your mouth right out of the 400 degree oven.... yeah I think the roof of my mouth is blistered - eek! I could just eat them like this, hubby loves them done this way but nope, we are LOADING these puppies. Still warm but cool enough to handle, cut a sliver of potato off one end, so that they can stand and a little off the top. I fluffed the potato up a little using a fork just scraping up the inside a bit, then topped with grated cheese, real bacon bits & pepper and then popped them in the oven until the cheese was melted, pulled them out and added a small dallop of sour cream. The ones below I just topped with sour cream, parsley and fresh ground pepper. You could make them look a little more fancy as i did below by topping them with sour cream, fresh ground pepper and chives. Looking for more recipes like this one?
