I usually gravitate toward easy meal recipes, ones that are quick, minimal ingredients but are still really yummy.... this is one of those and if you are lucky enough to have leftovers - Oh wow....... it's even better! First off I just browned some chopped up chicken & onion in a little seaseme oil until chicken was almost cooked inside. Then I added a bag of coleslaw mix, now you could shred your own but really ... Who's got time for that? I add the entire bag right on top of the chicken and then the remaining ingredients and voila, dinner done in about 15 mins. Gotta love that! My mom used to make something like this when I was growing up but she used to mix rice into it as well, when I recently asked her about the recipe her reply was...... "Oh honey I don't know, I used to just throw a bunch of stuff together in the pan" Then I got to thinking, that's when she was watching 'Wok with Yan', a Canadian cooking show featuring Stephen Yan cooking up Chinese cuisine. Come to think of it, that's about the time mom bought her wok - I felt so worldly when mom cooked with that wok.... Oh la la, small town Ontario and my mom has a wok. Chicken Egg Roll Stir Fry Ingredients 1lb boneless skinless chicken breast, chopped (sometimes I use less) 1 large onion, chopped 1 - 14oz bag a coleslaw mix Can of sliced water chestnuts (optional but I love the crunch) 4-5 cloves of garlic, minced (I used chopped garlic in a jar) 1 tablespoon of minced ginger (I used minced ginger in a jar) ½ teaspoon of black pepper 2 tablespoons of sesame oil ¼ cup of soy sauce. (I used low sodium) Directions 1) In a wok or large pot on medium heat add 1 tablespoon of sesame oil, chicken and onion, cook about 5 minutes until browned and almost cooked through. 2) Meanwhile Combine garlic, ginger, sesame oil, pepper and soy sauce in a small bowl and set aside. 3) Add entire bag of coleslaw mix to chicken, onion mix in wok/pot and stir for approximately 3-4 minutes, add soy sauce mixture and continue to cook for another 5-7 minutes until you reach desired crunchiness.
