So here's the scoop, Earthfresh asked me to create a recipe using their fingerling potatoes and the very first thing that came to mind - chips, a warm, fresh out of the oven dippin' chip. My inspiration was a local restaurant, they serve these as a side dish with their burgers but without the dip, there are never enough of them and to order them as an appetizer they are 6.99, CRAZY! These are super duper easy to make, slice, bake, eat. Start with the dip, the longer it sits, the better it is, Just mix all the dip ingredients in a medium bowl and let them get to know one another in the fridge while you start on the potatoes. Preheat your oven at 400f. Pat them dry with a paper towel, this is super important, it takes out the extra moisture. Put them in a bowl and add a little olive oil, just enough to lightly coat them. Add your seasoning, I used steak spice and tossed gently. then place them on a parchment lined baking sheet and place in a preheated 400f degree oven for approximately 20-25 mins until desired doneness. Resist eating them all right off the baking sheet. We ate them 2 nights in a row, once with burgers and then with steak - SO GOOD! Fingerling Chips & garlic dip Ingredients Chips 1lb of EarthFresh Fingerling potatoes Olive oil Steak seasoning Garlic Dip 1/2 cup of mayonnaise 1/4 cup of sour cream 3 cloves of minced garlic 1/2 tsp salt 1/2 tsp pepper Directions Preheat oven to 400f In medium bowl mix together all the ingredients for the garlic dip and refrigerate for at least 30 mins. Thinly slice EarthFresh Fingerling Potatoes lengthwise. Pat dry the sliced potatoes and drizzle with olive oil until lightly covered and sprinkle with steak spice or your choice of seasoning. Place in a single layer on a parchment lined baking sheet. Place baking sheet in preheated oven for 20-25 minutes until they've reached desired doneness. Remove from oven and serve warm with dip. These chips are also amazing once they've cooled off, either way they are crispy and delicious. PRINTABLE RECIPE BELOW.
