I love the natural sweetness of beets especially roasted, done simple with some olive oil salt & pepper. We have some amazing farmers markets in South Western Ontario and the closest one to me is always busy with shoppers, vendors, music and the aroma of fresh apple fritters - yum! When I saw the pile of red & golden beets, I just couldn't resist. My recipe is not really a recipe, more just an easy cooking method. I wash the beets and slice of the tops and the roots, they are just so pretty :) Then I give them a quick peel using either gloves or a pepertowel to hold them, they'll stain your hands if you don't. I then chop them into big chunks, put them in a cookie sheet or this time I used my cast iron pan, drizzled them with a couple tablespoons of olive oil (I eyeball it) and sprinkled on some salt & pepper. Then just pop them into a 400f degree oven for about 40 minutes. Voila - done!! Now I love them warm out of the oven, cold in a salad or any which way - they are just super yummy. There you have it.... Wash, peel, chop, olive oil, salt 7 pepper, in 400f oven for 40 minutes and you're done. My non-recipe. I ate half the pan with dinner and the other half cold for lunch the next day. Hubby doesn't like beets, he doesn't know what he's missing but it means more for me.
