I put this on cabbage slaw, broccoli slaw, shredded kale and even pasta for a macaroni salad. I use the bagged, already chopped slaws, it's just so darn easy. I don't know if I liked zucchini as a child, I don't even remember trying it until about 15 years ago and to be honest, I rarely eat it and I don't know why - I love it! This Corona Virus Pandemic has us staying home and cooking, baking and eating more than every before, we have the time to try new recipes. This one was being shared a lot on Facebook and I love apples, I LOVE cinnamon and the word FRITTER called my name Ooey, gooey cheesy delicious.
This COVID-19 virus has more people at home making good old fashioned homemade meals, that's a good thing. Hubby and I very rarely go out for dinner, mostly because I love to cook and now with this extra time I can create some new recipes, try some different recipes and experiment more. This recipe kept popping up on Pinterest and all over my facebook feed, I thought it was strange, weird and only 2 ingredients & 3 Freestyle points if you're following Weight Watchers, I just had to try it. It was destiny, I swear, I heard angels sing when I tasted one..... AhhhhAh...Ahhhh... AHH Ah.... If you're not on Weight Watchers, make them anyways because they are fricken' delectable! There are a million Cashew Chicken recipes out there, some are breaded and deep fried and some are more complicated to make but mine is an easier healthy option that's packed with flavour and you may even have most of the ingredients on hand.
I have to be honest, I don't usually make recipes with long ingredient lists but I did have everything in the pantry so I figured - go for it. It really wasn't hard at all, so happy I made it, in fact it was so delicious I was tempted to make it 2 days in a row even though we had it for dinner and then leftovers for lunch the next day.
So delicious, you may even want to double the sauce so you can eat it by the spoonful or ummm pour it over rice. This chicken is delicious, juicy & oh so flavourful, super easy & super fast, my kind of recipe!
I used the recipe that was on the Weight Watcher website site and if you are doing the Weight Watchers program, this only has 1 point per serving - oh yeah! Do you ever have a vision in your head of what something should look like?
