Best Ever - coleslaw dressing

I put this on cabbage slaw, broccoli slaw, shredded kale and even pasta for a macaroni salad.

I use the bagged, already chopped slaws, it's just so darn easy.
These are the brands I typically use, I'm in Canada but I'm sure these or something similar are available where you are.

Best Ever - Coleslaw Dressing

INGREDIENTS
​Dressing
  • ½ cup mayonnaise
  • 2 tablespoons white sugar or Splenda or Truvia
  • 1 ½ tablespoons lemon juice
  • 1 tablespoon vinegar
  • 1 teaspoon of poppy seeds (optional)
  • ½ teaspoon of celery seed (optional)
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt
Sometimes I'll also throw in some unsalted shelled sunflower seeds,
​apples or raisins.
Veggies
As I mentioned I typically use bagged, prechopped slaws.

INSTRUCTIONS
Mix all the dressing ingredients together in a small bowl until smooth, pour over veggies and enjoy right away or the more it sits, the better it gets.

Zucchini, cheese & onion bread

Zucchini, Cheese & Onion Loaf
I don't know if I liked zucchini as a child, I don't even remember trying it until about 15 years ago and to be honest, I rarely eat it and I don't know why - I love it!

Just look at all those tasty bits.
The zucchini is the secret weapon in this recipe, it makes this loaf super moist and YOU DON'T LIKE ZUCCHINI? No worries, you can even taste it.

ZUCCHINI, CHEESE & ONION BREAD

INGREDIENTS
  • 1 1/2 cup zucchini, shredded (do not squeeze)
  • 1/4 cup green onion, sliced or  1 tbsp dried minced onion
  • 2 large eggs
  • 3/4 cup sour cream
  • 1/4 cup butter, melted
  • 1 1/2 cup cheddar cheese, shredded
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • OPTIONAL*  additional 1/4 cup grated cheese for topping

DIRECTIONS
  1. Lightly grease with butter or spray a 9"x5" loaf pan.
  2. Mix the zucchini, green onions, eggs, sour cream, and butter, once mix together, add grated cheese stir until thoroughly blended.
  3. In separate bowl, mix the flour, baking powder, baking soda and salt.
  4. Mix the dry ingredients into the wet ingredients. If mixture seems too dry, add a couple tbsp of milk or water, it is supposed to be thick. 
  5. Pour the batter into a greased 9×5 inch loaf pan.
  6. Bake in a preheated 350F/180C oven for 30-35 minutes, remove from oven and add additional 1/4 cup cheese topping and return to oven for and additional  30-35 mins. or until a toothpick pushed into the center of the bread comes out clean, Total bake time is 50-70 minutes,  I always check at 50 mins.
  7. Let cool slightly before removing from pan. Slice and enjoy!, I store my loaf in an air tight container, eat it warm, room temperature or however, but you'll love it!

This recipe kept popping up on Pinterest and all over my facebook feed, I thought it was strange, weird and only 2 ingredients & 3 Freestyle points if you're following Weight Watchers, I just had to try it. It was destiny, I swear, I heard angels sing when I tasted one.....  AhhhhAh...Ahhhh... AHH Ah....

General Tsao's Chicken
I have to be honest, I don't usually make recipes with long ingredient lists but I did have everything in the pantry so I figured - go for it. It really wasn't hard at all, so happy I made it, in fact it was so delicious I was tempted to make it 2 days in a row even though we had it for dinner and then leftovers for lunch the next day.
So delicious, you may even want to double the sauce so you can eat it by the spoonful or ummm pour it over rice.
