 I have eaten this salad probably 15 times in the last month, I;m addicted I guess you could say. It's a little sweet, nice and crunchy and just plain perfect!

 What is Boccocini you may ask.....
Bocconcini, meaning "little bites" in Italian, are egg sized or smaller mozzarella cheeses that originated in Naples or as I like to say, little bites of yumminess.  You can assemble these super quick, they're pretty, colourful and absolutely delicious, it's Greek Salad on a stick.
 I like my chicken salad with a bit of crunch and a bit of sweet and this is the perfect combo - yum.
