So here's the scoop, Earthfresh asked me to create a recipe using their fingerling potatoes and the very first thing that came to mind - chips, a warm, fresh out of the oven dippin' chip.
My inspiration was a local restaurant, they serve these as a side dish with their burgers but without the dip, there are never enough of them and to order them as an appetizer they are 6.99, CRAZY! These are super duper easy to make, slice, bake, eat. Start with the dip, the longer it sits, the better it is, Just mix all the dip ingredients in a medium bowl and let them get to know one another in the fridge while you start on the potatoes. Preheat your oven at 400f.
