lt's a crazy world these days, nothing like most of us have ever experienced and I hope once this is over, we never will again. This Corona Virus Pandemic has us staying home and cooking, baking and eating more than every before, we have the time to try new recipes. This one was being shared a lot on Facebook and I love apples, I LOVE cinnamon and the word FRITTER called my name I made one loaf and it looked good and turned out so well that I immediately made a second loaf. I cut the 2nd loaf in half and some went to another couple and the other half to my mom and dad. It seems so strange, both were delivered to their front porches, no contact, no hugs just waves from the driveway and air kisses. This recipe was so moist and delicious I can't wait to make it a million more times and share it with all my friends. I tweaked the recipe slightly and the results are over the moon!! APPLE FRITTER LOAF Makes 1 standard loaf Ingredients Brown Sugar Cinnamon Mixture 1/3 cup of light brown sugar 1 ½ tsp of cinnamon Loaf Mixture 1/2 cup of soft butter 2/3 cup granulated sugar 2 room temperature eggs 2 tsp vanilla extract 1 ½ cups of all purpose flour (do not pack into measuring cup) 2 tsp baking powder 1/2 cup room temperature milk Chopped Apple Mixture Only make this after you have made the loaf mixture. 2 good sized apples (any variety) peeled and chopped in to smallish pieces 2 tbsp granulated sugar & 1 tsp cinnamon. Cream Cheese Glaze 4 oz room temperature cream cheese 1/2 cup icing sugar 1 tsp vanilla extract 2-3 tbsp milk Directions
