 When asked if I would like to create a recipe using EarthFresh Organic Potatoes my answer was - Heck ya!
 Cream cheese with garlic and onions flavours them topped with grated mozzarella cheese, who can resist?
 What is Boccocini you may ask.....
Bocconcini, meaning "little bites" in Italian, are egg sized or smaller mozzarella cheeses that originated in Naples or as I like to say, little bites of yumminess.  You can assemble these super quick, they're pretty, colourful and absolutely delicious, it's Greek Salad on a stick.
 These bite sized morsels of deliciousness are easy to whip up, make lots because they go fast!
I wanted to call this recipe 'Utterly delicious, Sweet & Spicy, Juicy & Crunchy Bacon Chicken Bites' but that was just way too long :)  My youngest sister who doesn't cook, prepared these for us one night - SAY WHAT??? They were scrumptious!!
