Bacon Chicken Bites
These bite sized morsels of deliciousness are easy to whip up, make lots because they go fast!
I wanted to call this recipe 'Utterly delicious, Sweet & Spicy, Juicy & Crunchy Bacon Chicken Bites' but that was just way too long  :)

I cut up chickent into bite sized chunks, I do it while the chicken is still slightly frozen- makes it easier.

Then I pur over and mix in about 3/4 cup of our favourite BBQ sauce.

Cut bacon into thirds - again slightly frozen makes it easier to cut.
Oh...and I cut way too much bacon here. My 2 chicken breats made 21 pieces so I really only need 7 slices...but that's ok, making more for New Years eve.  Mmmmmmmmm   Twice in one week, they are that GOOD!

Mix together about 3/4 cup of brown sugar & 2 tablespoons of chile powder, they have a bit of a zing but not hot at all. If you like them hotter, add more chile.

Next, just wrap the bacon around the chicken chunks, some of mine didn't go all the way around, but no worries, it all works...keep going.

Roll your bacon chicken chunk around in the brown sugar mixture, pressing the mixture so it's layered on there all nice....this is the good stuff.

Line a cookie sheet with parchement paper or foil and then place your finished chunks on a wire rack, this keeps the bites up out of the grease and allows more air flow so the bacon and chicken cook perfectly.

NOTE - I don't use toothpicks...  it always seems to stay together so I add the toothpicks after they are cooked.

45 mins to an hour later..... oh yeah, come to mama!!!!
This is when I add the toothpicks or fancy little forks.

Chicken Bacon Bites
Makes approximately 21 pieces

Ingredients
2 boneless skinless chicken breasts
3/4 cup of BBQ sauce
2 tablespoons of chile powder
7 slices of bacon (maybe more or less depending on size of chicken breasts
pepper
Directions
Preheat oven to 400 degrees
1. Cut up chicken into bite sized chunks & mix with BBQ sauce.
2. Cut up 7 or so slices of bacon into thirds & wrap around chicken chunks.
3. In a med bowl mix brown sugar, chile powder & pepper.
4. Roll bacon wrapped chicken bites in the brown sugar mixture.
5. Place on wire rack on a lined cookie sheet and bake for 45 minutes to an hour, until coked through.
