I have eaten this salad probably 15 times in the last month, I;m addicted I guess you could say. It's a little sweet, nice and crunchy and just plain perfect! I was volunteering at a festival and we all sat down for lunch when another volunteer brought over her famous Cucumber Salad. I had 3 helpings, I couldn't get enough and now I'm craving it again as i write this post. My mom made a version of this when I was growing up, some cucumbers, vinegar, water and pepper....sorry mom but it was ok. This is still simple, fast but adds another ingredient and a different method of preparation - yeah, I'm drooling, drooling over cucumbers, who wudda thunk? I peeled the cucumbers leaving on a little green for colour then thinly sliced the onions and cucumbers. Best to use english cucumbers, trust me. I have since bought a mandolin - where has that been all my life??? Then you add vinegar, water & sugar to a pot and bring to a boil, yup that the magic preparation step, can't skip it, no way, no how! Then pour the hot mixture over the bowl of cucumbers and onions, let it cool a bit, refrigerate until cold and then devour!! Some of the liquid absorbs into the cucumbers but some stays, you can serve with a slotted spoon or not and just drink up the excess liquid - it's that good. Cucumber Salad Ingredients 4 english cucumbers, thinly sliced 1 small white onion, thinly sliced 1 cup white vinegar 1/2 cup water 3/4 cup white sugar or a little less depending on taste pepper to taste Directions Place the sliced cucumbers and onions in a large bowl. Combine the vinegar, water and sugar in a saucepan over medium-high heat. Bring to a boil, and pour over the cucumber and onions. Cover and allow to cool a little thenrefrigerate until cold. allow the cucumbers to marinate for at least 1 hour and it's super refreshing to serve cold. Enjoy! Downloadable recipe below ![]()
