ZINGY Sticky Chicken Bites
I found this recipe online, it's a copycat recipe from 'Wingers' - never heard of the joint, perhaps an American restaurant and I'm a Canadian gal. The recipe sounded good but maybe a little sweet so I modified it and...man-o-man it's lip smackin' good!

I started with 4 good sized boneless chicken breast (the recipe i looked at used some kind of frozen breaded chicken but breaded my own.

I cut the chicken into pieces, hubby wanted chunks, more like boneless chicken wings and I wanted larger chicken finger kinda pieces. Then shake them in a ziplock baggie and coat with flour then dip into the eggs, then into the panko crumbs.

Place on a parchment lined cookie sheet and bake in oven at 425 for 15-20 minutes depending on the size of your chicken pieces.
Meanwhile get your sauce...yummy, delious, sticky, sweet, spicy, mouth watering sauce going  :)

The original recipe called for 1 1/3cup of brown sugar for the sauce, I just used 1 cup and to me it tasted perfect! Mix the Franks Red Hot and brown sugar together in a small pot over medium high heat until sugar is dissolved and mixture is boiling, change temp to low until chicken is ready. If you allow your sauce to cool it will thicken too much.

Zingy Sticky Chicken Bites
INGREDIENTS
  • 3-4 chicken breasts, pounded to ½ inch thickness
  • ½ cup flour
  • 3 eggs 
  • 1 1/2 - 2 cups panko bread crumbs
sauce
  • 1 cups brown sugar
  • ⅓ cup Frank's hot sauce or a little less if you prefer
  • ½ teaspoon garlic powder

INSTRUCTIONS
  1. Preheat oven to 425 and line a baking sheet with parchent paper.
  2. Cut chicken breasts into strips or chunks. Add chicken and flour to a large ziplock bag. Seal and toss to coat chicken in flour.
  3. Place panko crumbs in a bowl. In another bowl whisk together eggs.  Dip flour-coated chicken strips into egg mixture, then toss in panko crumbs to coat.
  4. Place coated chicken pieces on greased baking sheet and spray . Bake 15-20 minutes until chicken is browned and cooked through.
  5. While chicken is cooking, prepare the sauce. Add brown sugar and hot sauce to a small sauce pan and stir over medium-high heat until melted and mixture comes to a boil. Lower temp to the lowest setting, just to keep sauce wamr while chicken is cooking. 
  6. When chicken is done cooking, toss in sauce. Serve warm with ranch dressing if desired
