Toffee Saltines
Scrolling through Pinterest these popped out and grabbed my chubby cheeks and said "make me", who can argue with Pinterest?
I knew i had these simple ingredients on hand, I looked up a few more recipes, took away some tips and here ya go.....OMG!
Toffee Saltines
Line a cookie sheet (with an edge0 with foil and spray liberally with a cooking spray. Line up your crackers, don't overlap them but feel free to use broken ones, when they are covered in toffee you'll never know!
Toffee Saltines
In a saucepan melt a cup of butter and a cup of brown sugar, bring to a boil and IMPORTANT - allow to boil for 3 minutes, no less. This will be your toffee base and you want it thick.
Toffee Saltines
See, all thick, gooey and bubbly.
Toffee Saltines
Now pour the mixture over your crackers, spread evenly to cover the entire pan.
Toffee Saltines
All ready for the oven, 400 for 5-6 minutes.
Toffee Saltines
Out of the oven and still bubbling, my mouth is watering already!
Toffee Saltines
Sprinkle with 2 cups of semi sweet chocolate chips and allow to sit for a minute or two until they start melting. If they need help, pop them bake in the 'turned off' but still warm oven for about a minute.
Toffee Saltines
Spread chocolate chips with a spatula to 'ice' the cracker mixture.
Toffee Saltines
Now wait for them to cool...
This is the toughest step, it took about 2 hours to cool completely so I suggest running on a treadmill, going for a job, some jumping jacks maybe. Be proactive, these are highly addictive.
Or.... just go online and surf pinterest some more  :)
Toffee Saltines
All cooled - FINALLY!!
Ready to break or cut up....oh the anticipation!
Toffee Saltines
Many of the recipes I looked up called these 'Christmas Crack' but I say, why limit yourself to Christmas, these should be made weekly, ok, monthly...they are so easy and so good! No one will ever know you didn't slave over an oven making these, no one I served them to knew there were crackers in the recipe.
