Roasted Cabbage

Say What???? Bacon?
I cut the cabbage in half and then cut out some of the core.
I know, I know....  you're like - "wha-ev-vah, get to the bacon part!"

Cut the cabbage in to wedges place on parchment
 or foil lined cookie sheet. I LOVE parchment!
Drizzle with Balsamic Vinegar.

Pop in a 350 oven for about 20-30 mins, until you've reached the doneness you like. Ilike mine with a soft crunch. Then I crank up the oven and BROIL for about 5 minutes, until there is slight charring.

and now......
the BACON

Do the same as above, cut cabbage in half, cut out some core, cut into wedges and drizzle with Balsamic Vinegar.

Do not do what I did below! 
I cut the bacon in half and laid it across thinking
 "Oh yeah, I'm smart - maximum bacon coverage!"
WRONG!!!
It shrunk, fell off the cabbage and I had to eat it and start again
(Yup, I took one for the team)

Do it this way, one piece of bacon folded over the cabbage. pop the bacon covered cabbage in the over at 350 for about 20-30 minutes, until done to your likeness. The crank the oven up to broil for approximately 5 minutes to crisp up the bacon and chare cabbage.

I used this Balsamic on the second batch and oh my word.......

A little sweet from the Balsamic, acidity from the vinegar, smoke and salt from the bacon and I think I'm in heaven!
I ate 3/4 of a head of cabbage all by myself, nothing else, 
just that for dinner.

I made it with the bacon, followed recipe exactly (regular balsamic vinegar) and then I made it again for the next two nights. I am totally addicted to this. We are having a bbq this weekend and I plan on making it again for our company. Even my kids and husband like it. Thank you for sharing.
