I was asked by Tre Stelle to test out a couple recipies and of course I happily obliged. Since most consider cheese an unusual ingredient in desserts I headed right for the dessert recipes, I like unusual. I decided on their Tre Stelle Ricotta & Strawberry Brownie recipe and it didn't disappoint, it was light, not overly sweet and the perfect treat to end our bbq dinner. This was a super easy recipe and using a boxed brownie mix made it even simplier. I prepared my brownies as directed on the box using a 9x9 baking pan. I cut up a container of washed strawberries until I had 1 cup chopped. In a large bowl I mixed together the whipping cream and confectioners sugar until nice and thick. Then I added the ricotta and blended just a little more until smooth. Then I folded in my chopped strawberries after nibbling on a few :) I then cut up my brownies into individual sized squares, plated them a topped them with a dallop of the ricotta mixture and a whole strawberry to make it look pretty for guests. The next day we ate the leftovers, oh so yummy.... ok ok...... the truth, I even had some for breakfast the next day. I even tried this recipe minus the brownies and layered it in a glass for an elegant light and refreshing dessert. Ricotta is high in protein and makes for an excellent and healthy alternative to full fat cream cheese. Who would have thought a cheese would make such a scrumptious dessert.
