No written recipe required for these babies and boy are they ever moist & delicious. This is all you really need for these yummies, Spice cake mix in a box and a can of pure pumpkin (not pumpkin pie filling). Preheat your oven to 350 degrees. Dump your cake mix and 16 ounces of canned pumpkin into a large bowl. Mix it thoroughly, it'll be thick like a brownie mix. Fill up your muffins tins.... Now the batter doesn't fall while cooking so if you want your muffins a little smoother on the top, use a spatula to knock down the peaks. I personally like the rustic look. Pop them in the oven and bake for about 15 minutes until done. This recipe makes 12 muffins, 12 delicious, moist, falvourful muffins. This is where I add a 3rd ingredient but you don't have to but to me these just put them over the top. People will wonder what bakery you bought them from. Shhhhhhhhh........... I use this cream cheese frosting. I microwave about 1/4 cup for 15 secs until slightly melted and runny and then I drizzle the top of each muffin to make it look all pretty and yum, yum, yummy! Oh yeah............... Then I put each one in an upside down clear cup with a lid, added some ribbon and gave them away to friends. I may have kept a few at home but it's hard to restrain yourselves with these and we would have eaten all 12...in one day if I kept them all. So excited to take photos I packaged them while they were still warm, hence the condensation on the cups. What I've done in the past is soak 1/3 cup of raisins in hot water until soft and then added them to the batter before baking...Mmmmmm There you have it, delicious 2 Ingredient Pumpkin Spice Muffins.
