Yummy, easy and perfect for breakfast, lunch, dinner, snacking...  lol
I have to say honestly that these are the best muffins ev-ah!

The muffin starts off with these 2 imgredients, yup that's it.
I of course had to dress it up a little more.

See, that's it - canned pumpkin & Spice cake mix.

Mix it together, until completely moist, it'll be thick.

Fill your lined muffin tins.

here's where the little extra starts, I sprinkled mine with a little cinnamon-sugar mixture. Then into the oven, and OH MY...you house will smell delicious while these babies baked up.

Out of the oven and these are ready - BUT WAIT!
Maybe a cream cheese icing?  MMmmmmmmmmmm

So I whipped up some icing sugar, cream cheese, butter & vanilla.

Beat the ingredients until nice & creamy.

TIP - these liners are my absolute FAV, I mean FAVOURITE, nothing compares. Look how clean the muffin pulls away from the liner but more importantly - LOOK how bright the liner stays- LOVE THEM!
Now i just need to hunt down more patterns and colours.

Pumpkin Spice Muffins

Ingredients
Muffins
15 oz can pure pumkin (not pie filling)
1 box of Spice Cake mix
2 tbsp of white sugar
1 tsp of cinnamon
Cream Cheese Icing
1/4  cup butter - room temperature
4 oz. cream cheese (directly from fridge)
1 teaspoon vanilla extract 
3 cups powdered confectioners sugar
1 to 4 Tablespoons heavy cream, heavy whipping cream or milk



Directions
Preheat oven to 350
  • Beat cake mix and pumpkin together, that's it add nothing else.
  • Spoon equally into lined muffin tins
  • mix white sugar & cinnamon together a sprinkle over muffins.
  • bake at 350 for 20 mins. Remove and allow to cool.
  • Meanwhile with a hand mixer, beat together all the icing ingreadients until creamy & fluffy.
  • Once muffins are cooled, frost with cream cheese icing.
  • ENJOY!!
