Pineapple Upside Down Cake
It's easy, its delicious and starts with a boxed cake mix.
I had a couple girlfriends dropping by for a cup of tea one morning and I thought I would whip something up. I didn't have time for anything from scratch and it was a chilly, snowy kinda day. 
Warm Pineapple Upside Cake....oh yes! 
With whipped cream - even better!

I added the ingredients as directed on the cake mix box and then added a box of butterscotch pudding or you could use vanilla pudding.
Mix it all up as directed, Mix up the brown sugar topping, add pineapple and you are good to go!
Pineapple Upside Down Cake
Mine wasn't anything fancy, I used what I had on hand, pineapple tidbits and no cherries. Wasn't as colourful as traditional upside down cake but it was plenty yummy!
Pineapple Upside Down Cake
Ingredients
  1. 1 box of yellow/golden cake mix (I used Duncan Hines)
  2. ½ cup (1 stick) butter
  3. 1 cup packed brown sugar
  4. 1 (20 oz.) can pineapple slices or tidbits, drained
  5. Maraschino cherries (I didn't have any one hand)
  6. whipped cream or vanilla ice cream (optional but delicious!)

Baking Instructions
  1. Preheat oven to 350 ºF.
  2. Place butter in 13"x 9" pan. Place pan in oven to melt butter. 
  3. Once melted removed from oven and sprinkle with brown sugar. Arrange pineapple slices or spread tidbits and maraschino cherries on sugar mixture.
  4. Prepare cake mix as directed on package and add one package of instant pudding. Mix until blended.
  5. Pour batter evenly over fruit.
  6. Bake 50 minutes or until toothpick in center comes out clean. Let stand 5 minutes. Invert onto large serving plate or cookie sheet. Serve warm with whipped cream or ice cream. Moist and delicious when its cold as well but warm from the oven is best!
