So I'm thinking.... 4 grams of fibre per 1/2 cup of this oatmeal and you need 3 cups of oatmeal in this recipe. 4 x 6=24, make 24 big cookies and they'll have a gram of fibre per cookie...woohooo a healthy cookie! NOT! But they are scrumptious, chewy, chocolatey & yummy! This is what you'll need. Lay some parchment or waxed paper on your counter or cookie sheets. (2 cookie sheets) Add your milk, butter, cocoa & sugar to a sauce pan and stire to melt butter brining the mixture to a boil. THIS IS IMPORTANT, allow mixture to boil while constantly stirring for 2 minutes. (think of it as a 2 minute arm workout) Add peanut butter while still boiling until completely melted and mixture is silky and smooth. Add vanilla extract and oatmeal and stir until all the oatmeal is completely covered in chocolate. Now quickly spoon your mixture onto the waxed or parchment paper. Allow about 20 minutes to harden completely. If you wish, after about 10 minutes while these are still workable you can roll them into balls. I've done both drop cookies and balls. That's it, you're done! I can usually get about 40 cookies out of this, depends on how big you make them. Betcha can't have just one!!! No Bake, Highly Addictive Chocolate Oatmeal Cookies INGREDIENTS: 3 tablespoons unsweetened cocoa powder 1 1/2 cups white sugar 1/2 cup milk 1/2 cup butter 3 cups quick cooking oats 1/2 cup peanut butter 1 tablespoon vanilla extract DIRECTIONS: 1. Heat cocoa, sugar, milk and butter over medium heat, slowly bringing to a boil. Once they have started boiling (med boil) stir constantly for 2 minutes. 2. Add peanut butter, stirring until melted. 3. Add vanilla & oatmeal stirring until mixture is coved in chocolate. 4. drop by the spoonful on to waxed or parchment paper.
