My Mom's Chili isn't like any other chili I've ever had and I LOVE it, no other chilis compare. Growing up, Mom used to serve it with lightly buttered toast but now I serve it with a nice crusty loaf of bread. Brown a pound of ground beef and add a chopped up onion. I usually use the yellow cooking onions but only had a red onion on hand, just go with it. While your beef mixture is cooking, chop up some mushrooms & celery, I like lots of both Add the cooked ground beef mixture, raw celery, mushrooms and 3 cans of brown beans to the crockpot. You can use any kind of beans you wish, I prefer the canned brown beans in molasses, but I've used the ones in tomato sauce as well. You can add green peppers, red pepper or what ever else you wish but I'm doing it old school - mom's style. Cover the crockpot and let it work it's magic on low for a min. 4 hours. The mushrooms and celery have a high water content and sweat while cooking creating a delicious sauce (for lack of a better word). My mom never did this back then but I like mine with a dollop of sour cream and a little grated cheese - oh yeah... getting hungry here! Mom's Chili Ingredients: 1 lb of ground beef 1 large onion chopped 1 package mushrooms, sliced (as many or as little as you like) 6 stalks of celery, chopped, I add the leaves and all! 3 cans of beans in molasses optional: sour cream & grated cheese. Directions: -Brown gound beef and onions -Meanwhile, chop and slice mushrooms and celery - Add cooked beef mixture, raw mushrooms, celery and contents of 3 cans of beans (if they have pork in them, I pick it out) -Place in crockpot, cover and cook on low for minimum 4 hours, I've done 5, 6, even 7 hours before. -Ladle into bowls and enjoy!!
