Even as a child I found corn fields mezmerizing, rows on rows of my favourite summer vegetable. I didn't grow up on a farm but I wished I could run freely through the stalks playing hide 'n seek with friends. It was either my Dad or Grandpa that said corn should be "knee high by July", that saying has stuck with me my entire life and at the end of June I'm wondering if the beautiful stalks will make it. First week in July I'm eyeballing the fields as I drive by - yup, knee high for sure! Then I wonder, whos knee? My child height knee? Adult knee? Farmer John's knee? I usually cook my corn one way, boiling it....sometimes I'll BBQ it but I recently discovered an easy and fast way to cook corn on the cob and believe me, you'll be amazed! These were picked fresh this morning - yum! I know you're thinking.... what? Cook corn in the microwave? Skeptical? Try just one cob...do it....c'mon... Take your corn, husk, silks and all....pop it in the microwave for 4 minutes. You can do up to 4 cobs at a time this way. Remove from the microwave using an oven mitt and at the stem end, slice off about half an inch of cob. You can feel where the cob starts. Now gently squeeze and twist the end with the silks. Look what happens, the cob just slides right out - steaming hot and no silks, it's true! When I first read about this method I thought it seemed too easy and too good to be true... I was wrong.....it's amazing! No husking it's so darn easy, how many times can I say easy? easy, easy, easy, easy, easy, easy You get where I'm going, right? I swear this is the best tasting corn EVER !! I don't know the science behind it but perhaps the husk and silks maintain as well as add flavour? This recipe has brought out the monster in me, now I can have corn anytime I want, no need to bring out the big pot, no need to husk, no need to pick silks off my cob.... pure bliss! Corn cobby, buttery, sweet, crunchy, perfection. Are you licking your lips yet? Try it, one cob, I dare ya !!! let me know what you think!

This was delicious. They didn't exactly squeeze out, I had to peel /shuck them but the husk and strings came right off!! I upped the time to 8 minutes for 4 ears. They didn't seem really hot after 4 minutes, but my microwave may not be as strong. So it was 2 minutes per ear. SOOOOOOO GOOD!! I will never wait for a pot to boil again!!!

I saw this method on a you tube and I tried it yesterday....absolutely amazing....I hate shucking corn and this way you don't have to. I did have a struggle "sawing" off the end with a serated knife, but I bought it years ago and it is supposed to cut through a nail! Will always do my corn this way from now on!!! Fabulous!!
