This soup is so easy to make and it's it's delicious! This recipe makes 6-8 servings and my hubby & I ate it all...I almost licked the pot it was so yummy! Peel your potatoes. Chop them into bite sized pieces - 3 1/2 cups worth. Chop up 1/2 cup of celery & 1/3 cup of finely chopped onion. Dice 3/4 cup of cooked ham, I like them cut into smaller pieces. Add all your chopped up veggies & ham to a large pot with 3 1/4 cups of chicken stock. I like low sodium stock because the ham we are adding is salty enough. bring to a boil over medium heat until potatoes are tender, about 10-15 minutes. While your potato mixture is cooking away, we move onto the next step. Melt butter in a sauce pan over med-low heat, and add flour whisking constantly until thickened. Slowly add milk, keep whisking until smooth an thick about 1 minute, you want your flour to cook through. Keep stirring for a few more minutes until mixture is velvety smooth. Add milk mixture into soup, stirring to incorporate and let it simmer another 2-3 minutes. YOU'RE DONE!!! This is restaurant quality, yummy, creamy, hearty soup! A meal all on it's own - yum!!! Ham & Potato Soup Ingredients: 3 1/2 cups of peeled, chopped potatoes 1/3 cup diced celery 1/3 cup finely diced onion 3/4 cup of chopped cooked ham 3/14 cup of chicken stock/broth (low sodium) black pepper to taste 5 tablespoons of butter 5 tablespoons of flour 2 cups of milk. Directions: 1. In a large pot add chicken stock, celery, onions, ham & potatoes. bring to a boil over medium high heat and cook until potatoes are tender, about 10-15 minutes. 2. In a separate saucepan, melt butter over a medium -low heat until melted, add in flour stirring constantly until thickened. Slowly add in milk, whisking until you get a smooth velvety texture, continue stirring until thickened, about 5 minutes. 3. Stir milk mixture into potato pot, add pepper, mix thoroughly and allow to simmer for about 5 more minutes. PRINTABLE RECIPE BELOW
