Grilling fruit intensifies the natural sweetness making it even more delicious. Add lemon infused mascarpone and you have a wonderfully simple yet elegant dessert. You can core your pineapple if you like, I dont mind the core and it all softens once it's grilled. After a couple minutes I rotate the pineapples 90 degrees so I get those beautiful grill marks. Then I flip them a do the same on the other side. Aren't they pretty !They take about 3-5 minutes on each side and while they are grilling I start on the marcarpone mixture. Mix whipping cream and mascarpone together until slightly blended. Add the lemon zest, juice and honey. Mix until soft peaks form, I like this to be spoonable, not too thick so I'll add more whipping cream if needed. Let me check......... Remove those steamy slices of sweet golden deliciousness. Add 2-3 slices of pineapple in each bowl and a dollop of mascarpone. Added some lemon zest to the top and a drizzle of honey.... oh my!!! So, this mascarpone mixture is so delicious, it got my thinking..... (yeah I do that once in a while, it hurts but I still do it) perhaps I should try pairing this flavour with other foods... (The cookie jumped out at me....honestly...maybe...kinda...) I cut up some of the grilled pineapple, sliced a banana, added toasted coconut and a dollop of the mascarpone mixture. Holy tropical yumminess!!! If I had strawberries I would have added them as well or grapes or mango or cantelope or, or, or..... BUT WAIT!!!!!! I put a dollop on mandarin orange slices.... So the lesson I learned was that this mascarpone mixture is AWESOME and would probably make cardboard taste delicious! So go out and experiment! Bon Appetit
