Greek Chicken Marinade

I love chicken done this way, as a matter of fact-it's my favourite way of doing chicken, it's moist & delicious.
You can do it 3 ways
  1.  Add the chicken breast to the marinade in a freezer bag or I vacuum seal it in my FoodSaver (last longer in the freezer, no freezer burn), massage all the marinade into the chicken & freeze for future use.
  2. Same as above except don't freeze it, allow it to marinate for 4-6 hours or overnight before cooking.
  3. Slightly freeze chicken (it's easier that way) cut into large cubes, add to freezer bag or vacuum pack for use on skewers. You can marinate for at least 4 hours or freeze for future use. Remember if using wooden skewers, soak them for at least an hour in a bowl of water so the don't burn on the grill.

Put your chicken breast in a freezer bag, pour on the marinade.

I then vacuum sealed my chicken, if just using a regular freezer bag and you plan on freezing the chicken, be sure to squeeze out as much air as possible.

Marinated Greek Chicken 

Ingredients
4 boneless, skinless chicken breast
1/3 cup olive 
1/4 cup red wine vinegar
juice of 1 lemon
a couple lemon slices (I cut up the lemon I just squeezed)
4 garlic cloves, minced
1 tbsp dried oregano or italian seasoning
2 tsp dried thyme
1 tsp ground black pepper

Directions
Mix all the ingredients together in a bowl, put chicken in freezer bag,
pour marinade over chicken, add 2-3 lemon slices and you're done! 
Now You can allow this to marinate in the fridge for 4-6 hours or overnight or you can seal up the bag and freeze for future use.
If freezing, thaw before grilling.
