Crockpot Lasagna
Well here in South Western Ontario we had our fiirst big snowfall & I was feeling like some comfort food, some stick to your ribs kinda food. I had being wanting to try crockpot Lasagna for awhile now and today seemed like the perfect day for it.

I had all the ingredients on hand, ground beef, onions, spaghetti sauce, cottage cheese, parmesan and mozzarella...oh and lasagna noodles.

First I fried up the ground beef and onions until cooked then added a jar of sauce to it. - that step is done, easy eh?

Next i mixed up all the cheeses, a tub of cottage cheese, mozzarella & parmesan.... see, it's that easy! Now let the layering begin!

Oh first I lined my crockpot with these nifty liners, sorry to my Canadian friends, they only sell these in the USA. If you don't have these, spray your crockpot or butter it.

A little sauce on the bottom and then the noodles, uncooked regular dry lasagna noodles...nope, I didn't use the precooked ones.

Then half of the cheese mixture & more dry noodles. I broke up the noodles to fit, you'll never know once it's all cooked.

Then a few scoops of the meat mixture & more noodles

The remaining cheese mixture and more dry noodles, I can't stress DRY enough - so easy!

Top with remaining meat mixture & then I grated about 1 cup of mozzarella for the top. Put the cover on and cook on low for about 4 hours.
That's when the magic happens, the noodles soften to perfection and all the other ingredients party for 4 hours.

It wasn't runny, it wasn't dry...it was perfect, perfectly delish that is!

CROCKPOT LASAGNA
INGREDIENTS:
1 pound lean ground beef
1 onion, chopped
2 teaspoons minced garlic
1 (29 ounce) can tomato sauce
1 teaspoon dried oregano or Italian seasoning
1 (12 ounce) package lasagna noodles, regular dry noodles
12 ounces (500g) tub cottage cheese
1/2 cup grated Parmesan cheese
3 cups shredded mozzarella cheese

DIRECTIONS:
1.In a large skillet over medium heat cook the ground beef, onion, and garlic until brown. Add the tomato sauce, and oregano and stir  Cook until heated through.
2.In a large bowl mix together the cottage cheese,  Parmesan cheese, and 2 cups of shredded mozzarella cheese.
3.Spoon a layer of the meat mixture onto the bottom of the slow cooker. Add a layer of the uncooked lasagna noodles. Break to fit noodles into slow cooker. Top noodles with half of the cheese mixture. then noodles, then meat. repeat the layering of sauce, noodles, and cheese until all the ingredients are used. Top with remiaing 1 cup of shredded mozzarella.
4.Cover, and cook on LOW setting for 4 to 6 hours.
