I am a purest when it comes to egg salad sandwiches, I like it on super soft, fresh white bread, no extra add ins just great egg salad like mom used to make.
I boil my eggs until they have a soft creamy yellow yolk, no gray rings in these babies. See how I boil the to perfection HERE. I peel them when they are still slightly warm, makes it easier.
Everything is in one bowl and then I mix it to desired consistency.
I like mine still a little chunky.
Classic Egg Salad
8 hard boiled eggs
1/2 cup mayonnaise
1 teaspoon prepared yellow mustard
1/4 cup chopped green onion
1 celery rib diced
salt and pepper to taste
Peel and chop hardboiled eggs, to a medium bowl add all ingredients and mix until you reach your desired consistency.
Then I butter 2 slices of super fresh white bread, add a leaf of lettuce and a scoop of egg salad and voila - I immediately become an 8 year old eating lunch at the kitchen table, chatting with my mom.
