I've been wanting something a little lighter lately and I came across a Chopped Salad on Pinterest. I added my own spin ate 3 platefuls and still wanted more. I didn't do a photo tutorial because I figured it's a salad and you are a smart cookie, you can figure it out. It looks so pretty in the end and you can play with it a bit adding your favourite fruit and veggies. Chopped Salad printable recipe at bottom of post Ingredients All ingredient measurements are approximate, add more or less as you like. 6 cups of romaine lettuce cut or torn into small squares 2 cups of baby spinach cut or torn into small squares 1 apple, peel on (I had gala on hand) cut into small cubes 2 pears, peel on (I had borsc on hand) cut into small cubes 1/2 cup - 1 cup dried cranberries 1/2 cup of feta cheese, crumbled. 4 slices of cook bacon cut into small pieces (I use scissors) I experimented with the following dressings: Balsamic Vinaigrette, I used Renee's Gourmet brand Poppy Seed dressing, I used Renee's Gourmet brand, light Rasberry dressing, I used Ravin' Rasberry, Renee's Gourmet brand Pure Kraft Refrigerated Creamy Balsamic Dressing Toss all ingredients together in a bowl and serve. Adding dressing to individual plates. Next time I may add some finely sliced red onion and maybe some candid almonds or walnuts. I can't wait! Bon AppetitPrintable Recipe below.
