This is my famous Broccoli Salad, its crunchy, slightly sweet, fresh & delicious. I've seen versions with bacon or cheese, mine is a much simplier version with a clean taste. (wow, don't I sound all gourmet)
6 cups of broccoli chopped up into bite sized pieces
1/4 cup red onion finely chopped
1/2 cup raisins
4 tablespoons apple cider vinegar
4 tablespoons of sugar, splenda or other similiar substitute
1 1/2 cups mayonnaise, full fat, 1/2 fat, whichever you prefer
1/2 cup of sunflower seeds, I've used salted & unsalted, use whatever suits you
I mix everthing together in a very large bowl (I like lots of mixing space) until the broccoli is thoroughly coated. Cover & refridgerate until serving at least 2 hours.
I like to make this up to 1 day ahead, all the flavours meld, the raisins get nice & plump.
Don't be afraid to add a little more of this, a little less of that, play with it a little, make it your own.
