Blueberry Lemon Streusel Muffins

These are super easy, super fast and super delicious!

Every year my mom & dad go to Matachewan Ontario, Golden Eagle Camp. Here they fish, relax, explore and pick the most amazing tiny wild blueberries, if the bears and birds haven't got to them first.
I'm not a big fan of blueberries but hubby is and mom always brings him home a big bag of them. he eats them in yogurt, cereal and oatmeal, me...well I only like them...LOVE them in these muffins - YUM!

The zing of lemon and the bite of juicy blueberry is a little bit of heaven especially warm with a cup of tea. Yup...Im drooling.

Blueberry Lemon Streusel Muffins
Ingredients

• MUFFINS
• 1 box of  lemon cake mix & ingredients listed on box
• 1 cup of fesh or frozen blueberries
• 1 tablespoon of lemon zest
• STREUSEL TOPPING
• 1 cup of flour
• 1/2 cup melted butter
• 2/3 cup granulated sugar
• 1 tsp cinnamon

Directions

1. Mix cake mix as directed on box
2. Fold in blueberries & lemon zest
3. Pour into lined muffin pans
4. In a medium bowl mix all streusel ingredients until crumbly
5. Generously top each muffin
6. Bake as directed on box.
7. Enjoy!
