Seriously delicious brownies....seriously.... My friend Kelly has gone gluten free and awhile back I made her some GF (gluten free) Peanut Butter cookies she raved about them. They were yummy. She knows how I tick, raving about something I made you, makes me want to make more, more MORE! Hence, the Best EVER Gluten Free Brownies.... ever! yeah, I said it twice! I have seen those dry looking, lifeless loaves of GF bread in grocery stores @ $5.00 a loaf I might add! Cauliflower pizza crusts on pinterest. blah! (that's a sticking out my tongue kinda sound) To me GF was taste free..... and really I'm talking from my butt because I have never had anything purposely gluten free, so how could I really make assumptions? I searched the internet ... here, there and everywhere for the perfect GF brownie. I discovered safe grains, brown rice flour, white rice flour, sorghum flour, teff and millet. Millet, really???? I'm pretty sure we used to feed that to our budgies. Where do you buy these alien ingredients? UGH!!!! It seems so confusing!! I eyeballed a bunch of recipes and came up with my own. I wanted something moist and chocolately with a fudgy brownie texture. I came up with this, what I think is the BEST, hands down, the most perfect brownie EVAH <---trying to sound cool I'm not making this stuff up, it was a consensus. I had these in a pan, cut up all ready to go and then it happened.... my nephew took one, my two nieces - 1 each. "Can Hannah and Ian have one?" (neighbourhood kids) Nephew "Can I have another one?" ----------- 1 minute later-------- Nephew "Can I please have another one?" this time batting his eyelashes (he took two) I left for an appointment, came home and a few more were gone. "Who had a brownie?" A few chocolatey hands raised because they still had a mouthful. "Hummmffff...... you know they're gluten free, eh?" I said "EWWWWWW GROSSS" wailed my nephew, " I ate five!!" Curious, my 7 yr old niece asks while picking chocolate from her hair "What does good and free mean?" I'm just so happy that my gluten free experiment was a success and we all learned a lesson - Gluten Free isn't scary, it's delicious! BEST EVER Gluten Free Brownies INGREDIENTS: 2 eggs 1/2 cup oil 1/2 cup sugar 1/2 tsp baking powder 6 oz chocolate chips 1 tsp instant coffee granules 1/2 cup almond flour 1/4 cup of rice flour 1 tsp vanilla extract 1/4 cup chocolate chips for topping DIRECTIONS: Preheat oven to 350F. Line an 8x8 inch square baking pan with parchment paper or lightly grease & flour the pan. In a bowl place eggs, sugar, vanilla, oil, and coffee granules and mix thoroughly with a whisk to ensure everything is blended. Melt 6 oz of chocolate chips. Add the melted chocolate to the bowl and combine. Add the flours, salt and baking powder, and with a spatula, fold in until is all incorporated.. Pour batter in the prepared pan and sprinkle the 1/4 cup (more or less) of chocolate chips over the batter. Bake for 25-30 minutes. They will seem slightly uncooked when ready. Allow brownies to completely cool before slicing. After mine cooled I placed them in the fridge for about 30 minutes before cutting. Bon Appetit
