Just a few ingredients, this is so simple and so yummy! Mix together the flour, baking soda and salt. In a separate bowl, cream together your butter and brown sugar. Mash (I like my bananas still a little chunky, but you can mash as little or as much as you like) 3-4 super ripe bananas. I ended up using the 4 that were left browning on the counterand it measured out to 3 cups of bananas, more than the recipe calls for... but heck, who's going to complain about super banana flavour. In yet another bowl, mix together your 2 beaten eggs and your bananas Add you mashed banana mixture to the creamed butter-brown sugar mixture. Stir until it's all mixted well. Now the important part. Add your wet mixture to the dry mixture and stir ONLY UNTIL MIXTURE IS ENTIRELY WET. I'm ready to pour into the pan and there are still little bits of dry ingredients, that's ok, it all works out. The mixture will be nice and thick. Pour in to your prepared load pan. I am a huge, HUGE parchment paper fan, I line my loaf pan with it. When she was making this on an autumn morning with all her windows open I swear my feet would lift me off the ground and my nose would guide me to her front door. She always served her banana bread chilled and sliced thin with a little bit of butter..... heavenly, banana, bliss! I like mine chilled and sliced thick with some butter...yum! I wanted to call this Banana Banana, Banana, Banana Bread but when I said it out loud, it kind of sounded like Porky Pig trying to say it. You do it...say it out loud! This bread is so moist and so packed with with flavour. I have in the past added chocolate chips - turned out great! I've added walnuts - yummy ! I've glazed it - Mmmmmm.... But for the Banana Bread purist, this recipe is perfection! Banana-nana Bread INGREDIENTS: 2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup butter 3/4 cup brown sugar 2 eggs, beaten 2 1/3 cups mashed overripe bananas (I use between 3-4 bananas) DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a large bowl, combine flour, baking soda and salt. In another separate bowl, cream together butter and brown sugar. In a smaller bowl mash your bananas and add 2 beaten eggs until well blended. Stir banana mixture into butter-sugarr mixture, mix well. Add wet mixture to dry mixture; stir just to moisten. Pour batter into prepared loaf pan. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack. Slice and enjoy! Printable recipe below
