Leeks, I have 'Leeky Love'.I have always loved the flavour of leeks in soups, omelets, frittatas & dips. I have never cooked with a leek, I have always been afraid of them and now is the time to conquer this fear! So I did my research, went to the grocery store and carefully selected my first ever bundle of leeks. I got them home cut off the roots, cut off the greens and went to town! Oh so easy....what was I afraid of all these years? I peeled off the tough outer edge and sliced them for my soup. Now my research suggests that after chopping you would rinse them in cold water but I didn't, mine were very clean looking. Now I can breathe easy, I conquered my fear and off I go to create all sorts of leek filled goodies. Number one on my list, Potato & Leek Soup, I MUST recreate the soup I recently enjoyed.... I've been craving it! Stay tuned for the recipe tomorrow.

I'm making potato soup tommorow, will be dairy based. Have not had a potato soup for a super long time and it is such a comfort food for me, especially in the winter when the days are short and the weather is cool and damp.
