This is my absolute favourite way to eat a sweet potato - BAKED. Sweet potatoes are naturally sweet so to me, they don't need marshmallows, brown sugar and all that extra added sweetness. This is so simpple and delicious! Preheat your oven to 400 I wash them, poke a few holes, rub them with olive oil, and sprinkle with course salt & pop them in the oven for 50-60 minutes. DONE - BAM - POW - SUPER EASY!! I always add some butter & pepper and then I devour it... I even enjoy the crunchy skin...Mmmmmmm If you like, scoop out all the potatoes and serve from a bowl...
