Strawberry Cupcakes

Strawberry Cupcakes, fresh, sweet and juicy in flavour!

I cheated and used Duncan Hines Classic White boxed cake mix
 as well as strawberry jello.

I blended my strawberries, milk & oil until desired consistency was reached. I like to be able to see some strawberry pieces in the cupcakes.

Then I mixed my boxed caked mix, jello, strawberry mixture & eggs.

Once it's all blended I fill a measuring cup, I find it's easier to
 fill cupcake liners this way, less mess.

Fill the liners 2/3 full - gnarly muffic pans I know, I've had them for years, they aren't pretty but they work perfectly.

See look, I do have other pans as well, left gnarly, right is pretty

Then using my Duncan Hines frosting creations,
 I mixed up Strawberry Shortcake frosting.

Duncan Hines picked my name, my blog wasn't entered, nor did they know I even have a blog - so this isn't a paid advertisement, this is just me lovin' these new frosting creations!

Well, hello sweet berry !!!

A shout out to Heeman's,  they have a 'pick your own' strawberry farm
 as well as the most beautiful garden centre.
 I picked my strawberries and wandered the greenhouses taking pictures and breathing in natures fragrant flowers, I'll be posting pictures soon.

Strawberry Cupcakes

Ingredients
For cupcakes
1 box of Duncan Hines or any other brand of white cake mix
1 box of strawberry jello
1/2 cup vegetable oil
1 cup fresh mashed strawberries
1/2 cup milk
4 eggs
For frosting
Duncan Hines frosting creations base mix
Duncan Hines frosting creations Strawberry Shortcake flavor pack

Directions
Preheat of as directed on cake mix box.
Using cupcake liners, prepare a muffin tin for 24 cupcakes
DO NOT FOLLOW DIRECTIONS/INGREDIENTS ON BOX
In a blender add 1-1.5 cups of strawberries, 3/4 cup of vegetable oil and
1/2 cup of milk. Pulse or blend until mixture has reached desired consistency, I like mine with some berries still a little chunky.
In a large bowl add boxed caked mix, strawberry mixture, 1 box of jello and 4 eggs. Mix for one minute on low until blended and then 2 minutes on high until light and fluffy.
Fill cupcake liners 2/3 full and bake as directed using time indicated on the cake mix box.
Allow to cool
Mix up your Duncan Hines frosting creations and frost away!
I garnished my cupcakes with fresh whole strawberries.
