This is your back to basic potato salad, the kind grandma used to take to her bridge party potlucks, the salad mom used to take to the neighbours BBQ. The no fail 'oh so yummy - Potato Salad' Basic ingredients... potatoes, boiled eggs, mayo, chopped celery, onion,salt, pepper and bacon, yup, I said it B-A-C-O-N. Mmmmmmm....... In my opinion you must have eggs in a potato salad, it's delicious, creamy and it's a tradition :) HERE's how I make a perfectly cooked, creamy boiled egg. Potato Salad INGREDIENTS: 2 pounds clean, scrubbed potatoes (leave the skin on) 6 hard boiled eggs 1 pound bacon or I use bagged real bacon bits. 1 onion, finely chopped 1 stalk celery, finely chopped 2 cups mayonnaise salt and pepper to taste DIRECTIONS: 1. Cut up potatoes in to similiar sized pieces, leave the skin on. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 10 minutes. Drain and allow to slightly cool 2. Hard boil 6 eggs. See the way I do it HERE. Place eggs in a saucepan and cover at least 1 inch with cold water. Bring water to a boil and let boil for 1 minute, remove from heat and let eggs stand in hot water for 15 minutes. Remove from hot water, cool slightly, peel and chop. Eggs peel better when still slightly warm. 3. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. 4.. Add still slightly warm potatoes to a large bowl, along with the eggs, bacon, onion and celery. Add mayonnaise, salt and pepper to taste. Chill for an hour before serving.
