Moist delicious and easy to make, what more could you ask for?
Low fat Banana Muffins
1-1/4 cups very ripe and mashed bananas (about 3 or 4 bananas)
(I like to save 10 thin slices to put on top of muffins)
1/4 cup canola oil
1/4 cup sugar
1 tsp vanilla
1 1/2 cups all-purpose 1 tsp baking powder
1 tsp baking soda
1 tsp salt
Preheat oven to 350° F. and line 10 muffin cups with paper liners (or grease well).
Add mashed bananas to a large bowl or and beat with electric mixer, or use your stand mixer.
Add the oil and sugar and beat well.
Beat in the egg and vanilla in a small bowl, whisk together the flour, baking powder, soda, and salt.
Stir dry ingredients into wet mixture with a spoon, stirring just enough to moisten.
Divide batter between 10 muffin cups, top with 1 banana slice per muffin if desired.
Bake for 15-20 minutes. Printable recipe below
