Egg & Sausage Breakfast Burrito

I hadn't ever tried a Breakfast Burrito when I decided to make these. 
They are a meal in a wrap, so quick to just grab & go!

First I did all the chopping, when I'm doing this I like to pretend I;m a Food Network star... talking to myself the entire time. 
Takes me back to my childhood when I used to lather up my legs in the bath and then shave off the lather with a bar of soap, pretending I was in a commercial. I would take a tub of toothpaste, load up my brush and do another commercial in the mirror.... how did I never become an actress?

I browned up my sausage meat added the peppers & onions, cooking a little longer to allow them to soften up, I then poured over the entire carton of egg whites, stirring until cooked.

Then I added a cup of cheese and stirred until melted.

I sprinkled a little more cheese on the tortilla, add the egg & sausage mixture and rolled it up tucking in the ends so none of the yummy ingredients leaked out.

Then I sliced one, took pictures and ate it.... the price I have to pay for blogging about food...  tee hee. It was warm & eggy & cheesy & yummy!

I then wrapped each individual burrito in parchment paper, put them on a cookie sheet and popped them in the freezer for about an hour, just to harden up a bit.

Then I used my FoodSaver to make individual bags so I could vacuum pack each burrito individually, no freezer burn & they last much longer.
I was recently sent the new FoodSaver so I could try it out and do a review. I had an older model that I used all the time but this one was prettier...oh yeah and so much easier to use. Here is my REVIEW.
Egg & Sausage Breakfast Burrito
Here they are, ready to grab and go!

EGG & SAUSAGE BREAKFAST BURRITO
Ingredients:
  • 12 Medium Flour Tortillas
  • 1 Dozen Eggs or Egg Creations (liquid egg whites)
  • 1 Pound ground Turkey Sausage
  • 1 ½ Cups Shredded Cheddar Cheese or a little more
  • 1 Small Green Pepper diced
  • 1 Small Red Pepper diced
  • I small onion diced
  • 1 Teaspoon Garlic Powder
  • ½ Teaspoon Black Pepper

Directions:
  •    Add sausage to a fry pan and brown until almost cooked
  • Add in peppers and onion & cook until tender
  • If using eggs, crack into a bowl and whisk with a fork until blended and pour over sausage mixture or if using the carton egg whites, just pour over mixture.
  • Stir ingredients in the fry pan until eggs are cooked
  • Add about 1 cup of cheese, stire until melted
  • Lay out your tortillas, add a little cheese to each one and spoon on egg & sausage mixture & roll up, tucking in the ends.
  • Wrap each Tortilla in parchment paper and if using a FoosSaver, pop in the freezer for about an hour. If you aren't planning on vacuum packing them and plan on eating them within a week or so, just pop all the parchment wrapped burritos in a plastic container & freeze.
To eat from frozen
      Place parchment wrapped burrito in the microwave for 60 secs,
open up parchment and cook another 45-60 secs.
 Time may vary slightly depending on your microwave.  ENJOY!!
