Macaroni salad is an old stand by, a yummy classic for potlucks, picnics and BBQs. This is your basic creamy macaroni salad, no gourmet mustards or mayos, no fancy veggies, just delicious macaroni salad. Plain & Simple. I use this pasta, only because it has double the fibre of most other pastas. Cook the pasta as per the directions BUT do not cook al dente (slightly firm) cook just a little longer until the pasta is plump (but not mushy). While the pasta is cooking, prepare all your ingredients. I love chopping everything up ahead of time so that the prep is all done at the same time, makes me feel like a pro, a Food Network Chef...Everything in little cups or on a tray all ready to go. I may even say the ingredients and directions out loud as I go, imagining the camera rolling..... Please tell me I'm not the only one that does this? When I was younger, while having my bath I used to used the bar of soap to lather up my legs and then use that same bar of soap to 'shave' off the lather all the time pretending I was doing a Gillette commercial. I still haven't grown up :) Drain the pasta, quickly rinse under cold water (pasta should still be warm) and add mayo, mustard and all the ingredients to the warm pasta mixing thoroughly. If necessary add more mayonnaise, you want it REALLY creamy as it sets the dressing will absorb. The longer this sits the better, make it the night before or in the morning. This is the basic, I have added shredded carrots, green onions & pickles before. Play around, be adventurous & enjoy! Creamy Macaroni Salad Ingredients 1lb dry pasta 1/2 teaspoon granulated garlic 1/4 teaspoon salt 1/2 teaspoon black pepper 1 tablespoon prepared yellow mustard 1 1/3 cup of mayonnaise 1 tablespoon of white vinegar Minced onion to taste approximately 3/4 cup of diced celery Directions 1) Cook pasta as directed + slightly longer to allow pasta to plump up and get soft. (do not over cook) 2) While pasta is cooking prepare all your ingredients 3) Drain pasta & quickly rinse under cold water, leaving pasta slightly warm. 4) Mix all ingredients to pasta in a large bowl. dd extra mayo, sald or pepper as needed. Cover & refrigerate, the longer this can sit, the better. Give it a mix before serving.
