There are a million Cashew Chicken recipes out there, some are breaded and deep fried and some are more complicated to make but mine is an easier healthy option that's packed with flavour and you may even have most of the ingredients on hand.

I have to be honest, I don't usually make recipes with long ingredient lists but I did have everything in the pantry so I figured - go for it. It really wasn't hard at all, so happy I made it, in fact it was so delicious I was tempted to make it 2 days in a row even though we had it for dinner and then leftovers for lunch the next day.
So delicious, you may even want to double the sauce so you can eat it by the spoonful or ummm pour it over rice. This chicken is delicious, juicy & oh so flavourful, super easy & super fast, my kind of recipe!
I used the recipe that was on the Weight Watcher website site and if you are doing the Weight Watchers program, this only has 1 point per serving - oh yeah! When asked if I would like to create a recipe using EarthFresh Organic Potatoes my answer was - Heck ya!
It's no secret that I'm a fan of cheese especially a mild, creamy, buttery melt in your mouth cheese, like Havarti.
Cheedar, schmeddar..... Havarti is the only way to go when making any grilled cheese sandwich. Hubby loves pork tenderloin and I thought it was good but NOW I think it's amazing! I'm still craving it after making it two nights ago.
I found a recipe online and dabbled a bit with the ingredients and a juicy, flavourful piece of tenderloin is the result. I also love that it's just so darn easy. This was always in the rotation of cold weather meals when I was growing up. This isn't your usual shepherd's pie, it's pretty basic but it was yummy and filled our tummies and I still make it the same to this day.
Well here in South Western Ontario we had our fiirst big snowfall & I was feeling like some comfort food, some stick to your ribs kinda food. I had being wanting to try crockpot Lasagna for awhile now and today seemed like the perfect day for it.
