Chocolate Caramel Cupcakes with a milk chocolate icing drizzed with caramel sauce and sprinkled with toffee bits - how does that sound?

So I'm thinking.... 4 grams of fibre per 1/2 cup of this oatmeal and you need 3 cups of oatmeal in this recipe. 4 x 6=24, make 24 big cookies and they'll have a gram of fibre per cookie...woohooo a healthy cookie! NOT!
But they are scrumptious, chewy, chocolatey & yummy!  I LOVE shortbread.
