Lightly grease your muffin pans. This recipe makes 10 but I always grease 12 just in case one day I can squeeze 2 extra muffins out of this recipe. 10 muffin cups filled. Fill each cup approximately 3/4 full. In a small bowl mix together room temp butter, flour, brown sugar and cinnamon. Cut the mixture together until until crumbly. Top each muffin with this crumbly sweet goodness. This one is for Mrs Hughs, my grade 9 Home Economics teacher. Because she told us to, I always put water in any empty tins. I think the purpose is to regulate the temperature of the pan, but I really have no idea. Now bake these bits of banana heaven at 375 degrees for 18-20 minutes. Is this what you've been waiting for? Look at those crusty little sugar bits.....yummmm I LOVE to bake but I'm not a lover of baked goods except..... well.... anyways I usually let these cool about 2.5 minutes. This is just enough time so that I don't burn the skin off my finger tips removing one from the pan. Then I indulge with a pat of butter that melts almost instantly. You put water in the empty muffin tins so that the interior of the empty pocket does not burn and ruin your tins.
