Do you ever make something and think "why don't I make it more often?" That's exactly what i was thinking after I made this and then devoured half of it. It's so easy, tasty and nutritious - homerun! This method of cooking is a no brainer, so simple and the results are perfect. Poke (stab) all over squash about 10-15 times with a knife (please do so carefully and don't stab yourself). Put squash in a crockpot with 1 1/2 cups of water and set for low 4-5 hours depending on size. Once the time is up, remove from crockpot with oven mitts (this puppy is hot) and allow to cool for 5 minutes or so. Slice squash in half horizontally and scoop out the inside to a large bowl. Then using a fork or two just shred the squash, it easily separates into spaghetti like strands. Now I just love the squash on it's own with some butter salt and pepper but you can use it as you would spaghetti noodles, add some tomato sauce, parmesan cheese and voila! It's amazing tossed lightly with olive oil, some olives, feta cheese, the possibilities are endless. It's got such a mild flavour even the kiddies will like it. Just a recap....
