Acorn squash or Pepper squash is amazing, it's delicious and so easy to prepare. It's no secret that fall is my favourite time of year and when the squash are piled high at farmers markets, I swear i can hear them calling my name. There are loads of fancy ways to prepare acorn squash but why cover it with cheese and stuff when you can just enjoy it's flavour in a very basic way. I scoop out the seeds and stringy bits and trim a piece off the bottom so they sit flat on the baking sheet. I score the flesh with a sharp knife, rub the inside with buttter, sprinkle with a little brown sugar and drizzle with a little Canadian maple Syrup (why not eh?) Then in to the oven, 400 for about an hour. I like to serve it right in it's skin but if you find that too much for a serving, after it's cooked cut each half in half.. You could also scoop out the yummy insides and serve in large bowl, YUM! Baked Acorn Squash
