Say the name of this recipe 5 times fast! I think I should rename it to the ABC Appetizer = Apricot - Bacon - Cheese Appetizer. When Castello asked to me try some of their cheese, of course I jump with joy but this was an opportunity to try a cheese I've never had before. Castello Reserve Herrgard Cheese. I had never heard of this cheese and after a bit of research I discovered it's the most popular cheese in Sweden. If the Sweds love it, it's got to be worth trying - right? This cheese is similar in colour to butter, semi soft texture, smooth with a bit of a tang to it. Castello suggests it's best served with fruit so this is the perfect recipe. There is a girls night coming up, I plan on serving this again with a chutney and a baguette. I'll do a post on that as well so stay tuned. This recipe is right from the Castello website. I was unsure of the taste so I went right to the professionals for a recipe I could trust. On a parchment lined cookie sheet, put the bacon edge down and secure with a toothpick. Lookin' good! Now this is where I realized I made a mistake AND I didn't realize the mistake until I was writing this post. I was supposed to gently heat the apricot preserves and then pour them over the yummy bacon rolls. Ahhhhh I am so bad at following instructions. Instead I just spooned a plop of preserve on each piece. The good news about make this boo boo, one less pan to wash. The bad news about making this boo boo - NONE! This is the prepared pan I took to my sister inlaws Father's Day BBQ. In the oven at 375 for 15-20 minutes. Ohhhhhh yeahhhhhhhhh........ This has got it going on .... Smoke & salt from the bacon, sweet from the apricot, crunchy from the almonds and ooey, gooey goodness from the Herrgard cheese! The only thing I dont like...... the toothpicks. The toothpicks are a tell on how many of these you've you had to eat. A little pile of toothpicks on everyones plate.... Bacon Wrapped Herrgard Stuffed Apricots Ingredients 3 tbsp (45 mL) apricot preserves 24 large dried apricots 1 pkg (165 g) Castello® Reserve Herrgård® Cheese 24 almonds, roasted and salted 12 slices bacon, cut into halves toothpicks for assembly Method Preheat oven to 375ºF (190ºC). Place apricot preserves in a small saucepan and heat gently. With a small sharp knife, cut a lengthwise slit on one side of each apricot and gently pry open. Cut the Herrgård® Cheese into pieces small enough to fill the cavities of the apricots. Stuff each apricot with a piece of Herrgård® Cheese and an almond. Wrap a piece of bacon around each filled apricot and secure with a toothpick. Transfer wrapped apricots (bacon edge down) to a parchment paper lined baking sheet and brush with apricot preserves. Bake for approximately 15 to 20 minutes or until bacon is crispy and browned. Remove from oven and serve. Makes 24 appetizers Bon Appetit !
